Soy Sauce Roasted Almonds……Yummy, Nutritious AND Easy to Make!!

One of my favourite mid-morning snacks is my home-made almonds baked with soy sauce. Not only is it one of my family’s favourites, my officemates like them, too!!  😉

They’re so easy to make!  I use a light soy sauce and save lots of money making my version of the expensive tamari almonds found in the health food store.

Here’s what you need:

• 500 grams natural or raw almonds (unroasted)
• 1-2 tablespoons of light soy sauce (or tamari for a gluten free version)
• A baking tray large enough for all the almonds to lay flat in a single layer

Here’s what to do:
Preheat your oven to 180 degrees C.  Pour all the almonds onto the baking tray in a single layer and bake for 5 minutes  to heat the almonds. Add the soy sauce to a large bowl and then carefully pour the heated almonds into the bowl. Stir for about 2-3 minutes until all the soy sauce is absorbed by the almonds, then pour the almonds back onto the baking tray, spreading them evenly into a single layer. Bake for 5-7 minutes, stirring half way through to ensure all the soy sauce is absorbed and the almonds are dry. Allow the almonds to cool for a few minutes on the tray and then pour them
into a glass bowl to finish cooling. Store in an air tight container once completely cooled.

Almonds are a powerhouse food and a great source of energy to help you through your day.  Abundantly filled with so many essential vitamins and minerals, good fat, fiber, and protein……they can help reduce sugar cravings and make you feel fuller for longer.  And one of the best oils you can put on your skin is the oil that comes from these little gems, loving called ‘sweet’ almond oil.  Delicious, nutritious, and great for your skin…….what more could you want in a snack?  You’d be hard pressed to find a better bang for your buck, nutritionally speaking, that is!  So enjoy a handful of these little beauties every day and let them bring a delicious bright spot to your day while delivering so much goodness to your body!

This recipe makes quite a bit so adjust the amounts to suit your needs and experiment with the amount of soy sauce you add depending on how salty you like your almonds. They keep well for quite a while…unless everyone around you eats them up, that is!  🙂
